Stillwater has been operating out of Ritchies Mill on the Tamar since 2000 — a heritage flour mill on the riverbank at the bottom end of Launceston, with the restaurant downstairs and seven suites upstairs. The kitchen works almost entirely from northern Tasmanian producers and the menu changes seasonally; the wine list reads as a working argument for Tamar Valley Pinot and Riesling. Open Monday to Saturday, coffee from 10, lunch from 10.30, dinner from 5. Closed Sundays and public holidays. Bookings through SevenRooms. The restaurant has held Good Food Guide hats across most of its 25-year run.
