Borry Gartrell bought this 135-acre Orange property in 1964 and spent decades hauling eroded topsoil back uphill before planting apples, then wine grapes, then 500 truffle-inoculated oaks. The underground cellar — built ostensibly for wine storage — now hosts flamenco, cabaret and truffle dinners. A living working property, with 180 heritage apple varieties and 230 heritage plum varieties still going to select restaurants.
