Bunker Distillery

Founded by a former forensic investigator, this independent, family-run distillery has turned a talent for method into a broad spirits range: traditional and native-botanical gins built on finger lime and rosella, an aged Australian rum, agave spirits and single malt whisky. Production happens at Spring Grove, while the cellar door occupies the old Tooheys beer factory on Grafton's North Street, where guided tastings sit alongside a cocktail bar and a build-your-own-bottle experience. Recent recognition has been substantial, with gold medals across 2024 and 2025 and an award for the country's best unflavoured vodka among them. The approach leans on real fruit and natural ingredients, with botanicals drawn from the surrounding Northern Rivers. For a regional operation, the breadth of what comes off the still is unusual.
