Otto Dal Zotto grew up walking past Prosecco vines in Valdobbiadene before emigrating to Victoria. In 1987 he planted Italian varietals in the King Valley; by 1999 he'd made Australia's first Prosecco. The gamble held. Now run by the next generation, Dal Zotto remains the region's reference point for Glera, Sangiovese and long lunches that don't rush.
