The 1911 homestead Palmerston — restored by owners Colin and Judy Peterson — holds seven rooms with clawfoot or spa baths and underfloor-heated ensuites. Dinner runs seven nights from a menu that changes daily; cellar door pours span Peterson's Cool Climate, Mudgee and Hunter Valley wines. In winter, pre-dinner drinks happen in front of the fire in the great hall.
