Smoke Masters is pitmaster Scotty Masters, who grew up on the sawdust floors of his grandfather's Newcastle butcher shop and later his father's on Hunter Street before a Canberra radio career and, eventually, the low-and-slow habit that became this Fyshwick smokehouse. The proteins are all Australian, bought through Canberra fresh-food supplier Alpha Fresh. Off the smokers come brisket, beef ribs, tri-tip, picanha, house jerky and bacon, with a licensed bar alongside. The kitchen runs lunch through the week and caters across the region.
